How do I convert my Valorant sensitivity to Minecraft?

Do I need to change my DPI?

No. Keep the DPI you normally play at and leave both DPI fields the same. Only set different values if you genuinely use different DPIs in the two games; the converter accounts for it.

Why does my aim still feel slightly different?

Field of view, aspect ratio, and game feel (animations, movement speed) can make the same 360° distance feel different. The 360° rotation itself carries over; the difference you feel comes from those visual factors, not the conversion.
